Chorizo and chicken stew in the slow cooker

I bodged this recipe together as none of the other ones I read were right. (By that I mean I couldn’t be bothered to go to the shops.)

This is what I used for my 3.5litre slow cooker. You may need to adjust amounts - remember you should be filling your slow cooker to roughly 1inch from the top. I used too much chorizo so have suggested an amount a little less than what I used.

You need:

  • 2 peppers of any colour, cut into roughly 1inch squares 
  • 2 small onions or one big one, diced
  • 2 cloves garlic, diced
  • 1 tin chopped tomatoes
  • 2 tbls tomato puree
  • 1 tin kidney beans, drained
  • 1/2 small tin sweetcorn, drained
  • 3 chicken breasts, cut into large chunks 
  • 500ml chicken stock
  • About 100-150g chorizo sausage, cut into chunks at least 1cm long. (Don’t use the sliced stuff, it’s too small. You want the actual sausage.) (Snigger.)
  • Cajun spice
  • Salt and pepper

Put the peppers, garlic, chopped tomatoes, puree, kidney beans, sweetcorn, chicken stock, cajun spice, salt and pepper into the slow cooker. Don’t turn it on yet.

Grab a big frying pan, pop the chunks of chorizo on there on a medium/high heat. After you’ve done that for a bit and they’ve started to fry, you’ll notice the orangey oil leaching out. This is great!

Stick your onions in and fry with the chorizo until soft. Scoop the chorizo and onion into the slow cooker, leaving as much of the oil from the chorizo in the pan as possible. Now fry your chicken bits in there, it’ll take some of the beautiful colour. Just fry the chicken until the edges are sealed, doesn’t need to be cooked through. Put the chicken in the slow cooker, leaving it at the top. Make sure it gets covered by the liquid though.

Bit of salt and pepper, then stick it on high for about 8 hours.

I found that I needed to scoop out the oil that collected at the top as it was cooking, as there was too much for my liking. I think I did this 3 times. 

Now I have to say, this tasted amazing, and I’m not a great cook. It had a really rich flavour. I served with a small portion of plain boiled rice. I may have had seconds.
